Mushrooms are the most famous fungus. The button mushroom is wildly popular as low-calorie garnish. Of the 10,000+ species there are over 400 different tasty mushrooms.

Mushrooms may have first been eaten and employed medicinally by the Chinese over 2,000 years ago.

Raw dietary mushrooms are a good source of B vitamins and antioxidants, as well as some minerals, especially selenium, potassium, and copper. Eating mushrooms regularly subtly shifts the gut microbial community to better regulate sugar absorption.
